When I first arrived in Belgium, I didn’t know about Belgian cuisine. I only knew that Belgian chocolate was very famous. Later, I did some research online and discovered that Belgian cuisine is rich and varied, including fries, ribs, beer-braised beef, and more.
During my stay in Kortrijk, my Belgian host warmly invited me to dinner. He cooked two incredibly delicious Belgian dishes (Varkenskotelet met Bloemkool in Kaassaus and Braadworst met Spruiten) in the 3 days when I stayed there and also shared these recipes with me so I could share these delicious dishes with my friends and family back in Taiwan.
Braadworst met Spruiten is Dutch, It means “Sausage with Brussels Sprouts”, and is a traditional Belgian dish. This dish pairs juicy sausages with the unique, slightly bitter taste of Brussels sprouts, creating a comforting and nutritious meal that is perfect for any occasion.

Ingredients
Brussels Sprouts | 400g |
Butter | 40g |
Sausages | 4 (approx. 400g) |
Bacon | 200g |
Potatoes | 400g |
Instructions
Step 1: Prepare the Brussels Sprouts
- Clean the Brussels sprouts and make a cross-cut at the base for quicker cooking.
- Boil the Brussels sprouts until tender, then drain and set aside.
- At the same time, peel and chop the potatoes, then boil them until tender.
Step 2: Fry the Bacon
In a new pot, add butter and melt over high heat. Add the bacon and sauté until partially cooked.

Step 3: Add the Brussels Sprouts
- Add the cooked Brussels sprouts to the pot with the bacon and sauté together for about 5-10 minutes on medium heat.
- Season to taste. Since bacon is salty, you won’t need to add much salt. Add chili and pepper to taste. Besides, we also added two secret ingredients.
- Continue to sauté until the Brussels sprouts are soft, then cover with a lid and set aside.

Step 4: Cook the Sausages
- In a frying pan, add butter and melt it over high heat.
- Add the sausages and fry them, turning until cooked through.

Step 5: Finish
- Once the Brussels sprouts, sausages, and potatoes are ready, plate them.
- You can drizzle the butter from frying the sausages over the potatoes for extra flavor.
This hearty homemade dish, Braadworst met Spruiten, may seem complicated, but it’s quite simple to prepare. I usually just boil Brussels sprouts and eat them plain, but pairing them with bacon definitely the way to go!
