During my 30-day trip to Turkey, while staying in Bursa, I had the pleasure of being hosted by locals. They not only cooked a delicious Mercimek Soup but also made Turkish rice for me to enjoy. The Turkish way of cooking rice was different from what I had imagined. In Turkey, rice is cooked together with noodles, creating a unique flavor. Now, let’s take a look at how to make Turkish Pilav!
Pilav is best paired with Mercimek Soup (Lentil Soup).

Step 1: Prepare the rice and noodles
- Soak the rice for a whole day.

Step 2: Fry the noodles
- Heat the pan and add a piece of unsalted Turkish butter.
- Once the butter melts, add the noodles and stir-fry until slightly yellow.
Step 3: Add the rice
- Add the soaked rice to the pan, stir-frying with the noodles until the water from the rice evaporates.
- Add hot water to cover the rice and noodles, cover the pot, and fully cook.
Step 4: Finish
This is Turkish Pilav. The addition of butter at the beginning adds a nice flavour.
Mix the rice with Mercimek Soup. The aroma of the soup combined with the buttery rice makes for a perfect match. It’s so good, you’ll finish the entire pot.
