When I first arrived in Belgium, I didn’t know about Belgian cuisine. I only knew that Belgian chocolate was very famous. Later, I did some research online and discovered that Belgian cuisine is rich and varied, including fries, ribs, beer-braised beef, and more.
During my stay in Kortrijk, my Belgian host warmly invited me to dinner. He cooked two incredibly delicious Belgian dishes (Varkenskotelet met Bloemkool in Kaassaus and Braadworst met Spruiten) in the 3 days when I stayed there. He also shared these recipes with me so I could share these delicious dishes with my friends and family back in Taiwan.
Varkenskotelet met Bloemkool in Kaassaus, translated to “Pork Chop with Cauliflower in Cheese Sauce”, is a delightful Belgian dish that combines tender pork chops with creamy, cheesy cauliflower.
Varkenskotelet met Bloemkool in Kaassaus

Ingredients
Butter | 20g |
Flour | 30g |
Milk | 300ml |
Gruyere Cheese | 60g |
Potato | 400g approx. |
Cauliflower | 400g approx. |
Pork Chops | 600g approx. for 4 |
Salt, Pepper | Add to taste |
Instructions
Step 1: Prepare the Cauliflower
Clean the cauliflower and cut it into suitable sizes. Boil until cooked and drain.
Step 2: Make the Cheese Sauce
- Place the butter in a pot and heat on high until melted.
- Add flour, stirring continuously until it forms a paste.
- Slowly pour in the milk, continuing to stir until thickened.
- Season with salt and pepper to taste.
- Add Gruyere cheese and mix well.
Step 3: Bake the Cauliflower
- Pour the cheese sauce over the cauliflower and add some cheese on top.
- Bake the cauliflower in the oven until golden brown.
Step 4: Prepare the Potatoes and Pork Chops
- Peel and chop the potatoes, then boil until cooked.
- Pat the pork chops dry with kitchen paper and season with salt and pepper.
- Heat a suitable amount of butter in a pan and fry the pork chops on high heat until slightly charred on the surface. Adjust the doneness to your preference.
Step 5: Finish
- Check if the baked cauliflower is golden brown on the surface and if the potatoes are soft.
- Plate the pork chops, potatoes, and cauliflower. You can drizzle the butter used for frying the pork chops over the potatoes to add more flavor.
This dish is called Varkenskotelet met Bloemkool in Kaassaus. Doesn’t it look delicious? Although it’s high in calories, the dish is easy to prepare, and it’s definitely worth indulging in occasionally!
