Kale (Boerenkool) | 50g |
Potatoes | 500g |
Gelderse Rookworst | 250g Sausage |
Bacon | 100g |
Butter | 25g |
Milk | 25ml |

Pepper, salt, chili pepper, etc. | Add to taste |
Instructions
Step 1: Prepare Foods
Peel and cut the potatoes into chunks. Wash and finely chop the kale, then set aside.
Step 2: Boil Potatoes
Boil the potatoes in a pot until they are soft and easy to mash.
Step 3: Sauté Bacon & Onions
While the potatoes are boiling, heat a frying pan on high and cook the bacon. Because bacon has its own fat, there is no need to add extra oil. If the bacon doesn’t have enough fat, you can add a bit of olive oil. When the bacon is halfway cooked, add the chopped onions and continue to fry. When the onions become translucent, add seasonings and stir well. Keep the mixture warm on low heat.
Step 4: Add Kale
Once the potatoes are soft enough to mash, add the chopped kale. Since the kale is already finely chopped, it only needs to cook for about two minutes.
Step 5: Drain Water
After two minutes, drain the water, leaving the potatoes and kale in the pot.
Step 6: Add Other Foods
Return the potato and kale to the pot and put on the stove, add the cooked onion and bacon mixture, butter, and milk.
Step 7: Season & Mash
Add pepper, salt, and other seasonings, then start mashing and mixing the potatoes. Taste and adjust the seasoning if needed. If the mashed potatoes are too dry, add more milk. If they are too wet, add more potatoes to adjust the texture.
Step 8: Finish
Heat the smoked sausage in the microwave, slice it, and serve it with the mashed potatoes.
This Boerenkool Stamppot is simple to prepare and has a rich texture. The creamy butter and soft potatoes combine perfectly, with a subtle crunch from the kale. I finished the whole bowl in under 10 minutes.
