Healthy Vegetarian Food for Dinner in Changhua: YuanWeiShuShi

Although I don’t usually eat vegetarian food, I decided to try this healthy vegetarian food for dinner in Changhua – YuanWeiShuShi(蒝味蔬食), on the strong recommendation of a friend. This restaurant is conveniently located near Eight Trigram Mountains(BaGuaShan) but needs parking in nearby paid lots. Upon entering YuanWeiShuShi, I was immediately struck by its nostalgic vibe. The interior decor makes me feel as though I’ve stepped back into the 1950s and 60s—something that would surely evoke fond memories for my parents’ generation.

YuanWeiShuShi offers a reasonably priced menu with a wide variety of options. Whether you prefer dry noodles or soup noodles, you can choose from soba noodles, black sesame noodles, mugwort noodles, or Red yeast noodles, each with its own unique flavor, making it difficult to decide. The side dishes area was also a pleasant surprise, breaking away from traditional styles with a vibrant and appetizing presentation. After much deliberation, we selected four side dishes:

  1. Roselle Honey Tomatoes: Tomatoes soaked in roselle juice and seasoned with plums, boasting a bright color and a sweet and sour taste that is both refreshing and appetite-boosting.
  2. Cheese Sweet Potato Yam Rolls: Snow skin wraps filled with yam and sweet potato, melting in your mouth with a delicate texture, leaving a lasting impression.
  3. Rice Noodle Vegetable Fruit Rolls: Vegetables and apples wrapped in rice noodles with a yuzu sauce, offering a unique taste, though the rice noodles were a bit thick.
  4. Apple Alfalfa Sprout Rolls: This dish is made to order to keep the seaweed crispy, with the sweet and juicy combination of alfalfa sprouts and apples tasting incredibly fresh.

After enjoying the special side dishes, it was time for our noodles! The first was Toon Spicy Sauce Soba Noodles. The noodles were springy and chewy, perfectly complemented by the spicy sauce, and generously topped with sweet potato leaves and tofu, making it a great value. Next, I tried the Assorted Vegetable Black Sesame Noodles, which were visually striking with their colorful toppings. Besides noodles, included enoki mushrooms, yam, radish, pumpkin, and more, providing both nutrition and flavor. The broth had a strong Chinese Angelica taste, which might be overwhelming for those who aren’t fans of it.

We also ordered two more common side dishes. The first was a Mixed Marinated Platter(medium), which included more processed foods—a good option if one bowl of noodles isn’t enough. The second was Seasonal Boiled Vegetables, although the boiled vegetables with vegetarian meat sauce were quite ordinary, adding the Homemade Douchi Dried Radish Chili Sauce significantly elevated the flavor.

Unlike many vegetarian restaurants, YuanWeiShuShi focuses on health, avoiding excessively processed foods or mock meats, and the dishes are not greasy, breaking my preconceived notions of traditional vegetarian food. It offers a healthy and satisfying dining experience. If you ever find yourself near Eight Trigram Mountains(BaGuaShan) in Changhua, consider stopping by YuanWeiShuShi to experience their healthy vegetarian cuisine after a hike.
