Russian Homestyle Soup Recipe – Уха (Ukha)

When it comes to Russia, most of its territory is in the northern regions, so the weather is mostly cold. As a result, there are many famous soups, such as borscht and Beetroot Soup. During my visit to Moscow, I had the opportunity to taste a soup called Ukha, thanks to the hospitality of the locals.

Ukha is a Russian soup made with fish and vegetables. The word “Ukha” comes from the Old Slavic word for “soup”. However, since the 17th century, Ukha has specifically referred to fish soup.

Now, let’s take a look at this historic Russian fish soup recipe and how it is made!

Ingredients

Fish2 (choose your preferred type)
Potatoes500g
Onion1 small (100g approx.)
Carrot1 (100g approx.)
Butter1 tablespoon (14g approx.)
Bay leaves4 or 5
PeppercornsAdd to taste
Ground pepperAdd to taste
DillAdd to taste
Salt1 tablespoon
Water1 liter

Instructions

Step 1: Prepare the fish

  1. Clean the fish and remove the guts. Keep the fish bones, tail, and lower fins.
  2. Put the fish in a pot, add 1 liter of water, and bring to a boil over high heat.
  3. Once boiling, add 1 tablespoon of salt, turn the heat to low, cover the pot, and simmer for 25 minutes.

Step 2: Prepare the vegetables

Cut the onion into chunks, dice the potatoes, and grate the carrot.

Step 3: Remove fish bones and add vegetables

  1. After 25 minutes, remove the main parts of the fish bones, tail, and other parts.
  2. Add the potatoes, carrots, and onions.
  3. Add peppercorns, ground pepper, bay leaves, and dill.

Step 4: Finish

Continue cooking for about 25 minutes until the vegetables are tender, and the soup is ready.

This soup is fresh and delicious, but be careful of fish bones while eating. As winter is coming, having a bowl of Ukha on a cold day warms both the heart and the stomach, filling you with happiness! 😊
